  • 3/4 c. soft margarine
  • 1 egg
  • 1/2 tsp. cinnamon
  • 4 c. uncooked quick oats
  • 1/2 c. chopped nuts (optional)
  • 1 c. packed brown sugar
  • 1/2 tsp. salt
  • 1 1/2 c. mashed bananas (3 large)
  • 1/2 c. raisins

    Preheat oven to 350° and grease a 13 x 9 x 2-inch pan.

    In large bowl, cream butter and sugar until light and fluffy with electric mixer.

    At medium speed, beat in egg, salt, cinnamon and bananas.

    Stir in remaining ingredients.

    Turn batter into pan. Bake for 45 to 55 minutes or until cake tester comes out clean. Cool before cutting.
