Ingredients
- 1 lb. pork sausage
- 1/4 c. diced onion
- 1/4 c. diced bell pepper
- 1 1/2 c. frozen hash browns
- 4 eggs, beaten
- 1/2 c. Cheddar cheese, grated
- picante sauce
- sour cream
- 12 flour tortillas
Directions

1Brown sausage in large skillet.

2Add onion and pepper and cook until tender.

3Drain.

4Add potatoes and cook for 8 minutes. Add eggs and stir and cook until eggs are done.

5Prepare tortillas by heating in hot oil for 5 seconds on each side. Divide filling mixture between 12 tortillas, placing filling in center of each.

6Sprinkle with cheese.

7Fold over each side. Serve with picante sauce and sour cream.

8These may be frozen and heated in microwave.
