  • 1 doz. eggs
  • 1 pkg. flour tortillas
  • 1 (8 oz. or 2 c.) pkg. shredded cheese
  • 1 can enchilada sauce (mild)
  • sour cream (optional)
  • salsa (optional)

    Crack eggs into a bowl and add a little milk. Use wire whisk or fork to beat eggs. Scramble eggs in skillet. When eggs are done, take away from heat. Take flour tortilla and place a spoonful of eggs. Add little cheese and roll up. Place in baking dish, 9 x 13 size. Pour enchilada sauce over the burritos and sprinkle rest of cheese on top. Bake at 350° for about 10 minutes or until cheese has melted. Can serve with sour cream or salsa.
