- 3 tablespoons butter
- 5 1/2 ounces ham diced
- 6 scallions trimmed and chopped
- 4 flour tortillas soft
- 8 medium eggs room temperature
- 2 tablespoons cream
- 3 1/2 ounces cheddar grated
- 1 tablespoon parsley chopped
- 2 ounces feta cheese crumbled, optional
- 1/3 cup cilantro chopped, optional
- hot sauce such as Tabasco, to serve
Directions

1Heat 1 tbsp of butter in a small frying pan and add the ham. Cook for several minutes until browned, then add the scallions. Cook for 3-4 mins, just until the scallions start to wilt. Turn off the heat.

2Wrap the tortillas in foil and place them in the oven on low heat to warm.

3Whisk the eggs with the cream, ham and scallions and season to taste. Melt 2 tbsp of butter in a medium frying pan over low heat. Add the eggs and cook for about 7 mins, stirring occasionally. Sprinkle with cheddar and parsley.

4Remove the tortillas from the oven, spoon on the scrambled eggs and add the feta and cilantro, if using. Sprinkle with hot sauce, roll up and serve.
