Ingredients
- 2 1/2 c. herbed seasoned croutons
- 2 c. shredded sharp Cheddar cheese (5 1/2 oz.)
- 1/4 lb. sliced mushrooms (approximately 1 1/2 c.)
- 2 lb. sausage
- 6 eggs
- 2 1/2 c. milk
- 1 can cream of mushroom soup
- 3/4 tsp. dry mustard
Directions

1Grease a 9 x 13-inch baking dish. Arrange croutons in single layer in bottom of dish.

2Sprinkle cheese and mushrooms evenly over croutons. Cook sausage in a large skillet, breaking into chunks, until browned, about 15 minutes.

3Drain thoroughly. Place sausage over cheese and mushrooms. Beat eggs, milk, soup and mustard.

4Pour over sausage.

5Bake until set, about 1 1/2 hours at 300°.

6Serve hot.

7This can be prepared ahead and refrigerated overnight.
