Ingredients

  • 18 hard-boiled eggs, sliced
  • 2 cans cream of mushroom soup
  • 1 small jar sliced mushrooms
  • 1 lb. bacon or sausage, fried or browned until crisp and then drained on paper towel
  • 1 c. mayonnaise (must use mayonnaise)
  • 1 small jar chopped pimentos
  • pepper to taste
  • chives to taste

Directions

    Mix soup, mushrooms, pimentos, mayonnaise and seasonings. Layer alternately with hard-boiled eggs, bacon (or sausage) in a 3-quart casserole.

    End with sauce on top. Bake at 350° until bubbly, about 30 minutes.

    Serve with fried apples and hot biscuits.
