  • garlic salt and ground black pepper to taste
  • 12 corn tortillas (6 inch)
  • refried black beans

  • 1/2 cup chopped onion

  • sour cream and cilantro (to garnish)

Directions

    Break eggs into shallow bowl; beat lightly.

    Mix in garlic salt and black pepper.

    Dip tortillas into egg mixture.

    Add, 1 at a time, to hot skillet sprayed with no stick cooking spray; cook until golden brown on both sides.

    Remove from skillet.

    Spread 1/2 of the tortillas with beans; sprinkle evenly with peppers, VELVEETA, onion and tomato.

    Cover with remaining tortillas (to make sandwiches).

    Garnish with sour cream and cilantro.
