- 2 c. cooked brown rice
- 1 c. crushed unsweetened pineapple
- 1/4 c. raisins
- 1 medium ripe banana
- 3/4 c. hot water
- 1/2 c. raw cashews (scant)
- 3 Tbsp. frozen orange juice concentrate
- 1 tsp. vanilla
- 1/2 tsp. almond flavoring
Directions

1Mix first 3 ingredients in 8 x 8-inch casserole dish.

2Blend remaining ingredients until smooth and pour over rice and fruit. Bake at 350° for 45 minutes and serve hot or make ahead by baking for 30 minutes and reheating just before serving.

3Garnish with peaches or banana slices, if desired.
