  • 2 c. cooked brown rice
  • 1 c. crushed unsweetened pineapple
  • 1/4 c. raisins
  • 1 medium ripe banana
  • 3/4 c. hot water
  • 1/2 c. raw cashews (scant)
  • 3 Tbsp. frozen orange juice concentrate
  • 1 tsp. vanilla
  • 1/2 tsp. almond flavoring

Directions

    Mix first 3 ingredients in 8 x 8-inch casserole dish.

    Blend remaining ingredients until smooth and pour over rice and fruit. Bake at 350° for 45 minutes and serve hot or make ahead by baking for 30 minutes and reheating just before serving.

    Garnish with peaches or banana slices, if desired.
