  • 4 whole Russet Potatoes, Washed And Chopped Into 1-inch Cubes (peel If Desired)
  • 6 whole Eggs, Scrambled
  • 1 cup Grated Cheddar Cheese
  • 2 cups Ham Cubes (can Substitute Cooked Sausage Or Bacon)

Directions

    Cook the potatoes in just a little bit of water until soft, but not mushy. Drain excess water.

    While potatoes are cooking, scramble the eggs. (Cook bacon or sausage if using those).

    When potatoes are done, combine the ham (sausage/bacon), eggs, and cheese until mixed and cheese is melted.

    Serve with extra cheese if desired. Or put in tortillas for a breakfast burrito.
