- 2 cups flour
- 1-1/4 cups sugar
- 2 teaspoons cinnamon
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 1/2 cup grated coconut (optional)
- 1/2 cup currants or raisins (optional)
- 1/2 cup chopped walnuts or pecans (optional)
- 2 cups grated carrot/zucchini/apples
- 3/4 cup vegetable oil
- 3 eggs or egg substitute equivalent
- 2 teaspoons vanilla
Directions

1Preheat oven to 350 degrees.

2Spray loaf pans with vegetable spray.

3Mix dry ingredients (flour, sugar, spices, optional ingredients if used).

4Add grated carrots/zucchini/apple, oil, eggs, vanilla to dry ingredients and mix well.

5Pour batter into loaf pans.

6Bake 1 hour or until loaf is dry in middle and shrinking from sides of pan.
