Ingredients

  • 2 cups flour
  • 1-1/4 cups sugar
  • 2 teaspoons cinnamon
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1/2 cup grated coconut (optional)
  • 1/2 cup currants or raisins (optional)
  • 1/2 cup chopped walnuts or pecans (optional)
  • 2 cups grated carrot/zucchini/apples
  • 3/4 cup vegetable oil
  • 3 eggs or egg substitute equivalent
  • 2 teaspoons vanilla

Directions

    Preheat oven to 350 degrees.

    Spray loaf pans with vegetable spray.

    Mix dry ingredients (flour, sugar, spices, optional ingredients if used).

    Add grated carrots/zucchini/apple, oil, eggs, vanilla to dry ingredients and mix well.

    Pour batter into loaf pans.

    Bake 1 hour or until loaf is dry in middle and shrinking from sides of pan.
