- 1 each flour tortillas, whole wheat 8-inch
- 2 tablespoons pizza sauce or more as needed
- 2 slices swiss cheese tear or cut into small pieces, or shredded about 1/4 cup
- 4 tablespoons sweet bell peppers green and/or red, chopped
- 4 tablespoons tomatoes chopped
- 1 each mushrooms, button or cremini, quarted and sliced
- 1 tablespoon pickled jalapenos chopped, or more as needed
- 2 tablespoons cilantro freshly chopped
- 1 each scallions, spring or green onions sliced
- 1 large eggs pan-fried
- 1 x red hot pepper sauce or any hot pepper sauce, for serving, optional
Directions

1Preheat the oven to 425 degrees F.

2Place the tortilla on a pizza pan or a baking sheet slightly coated with cooking spray.

3Spoon the pizza sauce evenly over the tortilla.

4Place the cheese pieces on top of pizza sauce.

5Arrange the bell peppers, mushrooms, tomatoes, and picked jalapenos over the cheese.

6Bake for about 10 minutes, or until the edges of tortilla start to become slightly brown, and the cheese has melted.

7Remove from the oven, top with a pan-fried egg if needed, sprinkle with fresh cilantro and scallions.

8Drizzle with a bit hot sauce if desired,
