  • 1 each flour tortillas, whole wheat 8-inch
  • 2 tablespoons pizza sauce or more as needed
  • 2 slices swiss cheese tear or cut into small pieces, or shredded about 1/4 cup
  • 4 tablespoons sweet bell peppers green and/or red, chopped
  • 4 tablespoons tomatoes chopped
  • 1 each mushrooms, button or cremini, quarted and sliced
  • 1 tablespoon pickled jalapenos chopped, or more as needed
  • 2 tablespoons cilantro freshly chopped
  • 1 each scallions, spring or green onions sliced
  • 1 large eggs pan-fried
  • 1 x red hot pepper sauce or any hot pepper sauce, for serving, optional

Directions

    Preheat the oven to 425 degrees F.

    Place the tortilla on a pizza pan or a baking sheet slightly coated with cooking spray.

    Spoon the pizza sauce evenly over the tortilla.

    Place the cheese pieces on top of pizza sauce.

    Arrange the bell peppers, mushrooms, tomatoes, and picked jalapenos over the cheese.

    Bake for about 10 minutes, or until the edges of tortilla start to become slightly brown, and the cheese has melted.

    Remove from the oven, top with a pan-fried egg if needed, sprinkle with fresh cilantro and scallions.
