- 2 tsp. cinnamon
- 1/4 tsp. salt
- 1 c. coconut
- 3 eggs
- 2 tsp. vanilla
- 1 apple, peeled, cored and grated
- 2 c. grated carrots
- 1/2 c. chopped nuts
- 1 c. vegetable oil
Directions

1Mix together flour, sugar, baking soda, cinnamon, salt and coconut.

2Add eggs, oil and vanilla.

3Stir in rest of ingredients. Bake at 350° for 20 minutes in greased or paper lined muffin pans.
