  • 2 c. flour
  • 1 1/2 c. sugar
  • 2 tsp. baking soda
  • 2 tsp. cinnamon
  • 1/4 tsp. salt
  • 1 c. coconut
  • 3 eggs
  • 2 tsp. vanilla
  • 1 apple, peeled, cored and grated
  • 2 c. grated carrots
  • 1/2 c. chopped nuts
  • 1 c. vegetable oil

Directions

    Mix together flour, sugar, baking soda, cinnamon, salt and coconut.

    Add eggs, oil and vanilla.

    Stir in rest of ingredients. Bake at 350° for 20 minutes in greased or paper lined muffin pans.
