- 1 egg
- 3/4 c. milk
- 1/2 c. vegetable oil
- 2 c. flour
- 1/3 c. sugar
- 3 tsp. baking powder
- 1 tsp. salt
Directions

1Heat oven to 400°.

2Grease bottoms only of about 12 muffin cups.

3Beat egg; stir in milk and oil.

4Stir in remaining ingredients all at once just until flour is moistened (batter will be lumpy).

5Fill muffin cups about 3/4 full.

6Bake until golden brown, about 20 minutes.

7Immediately remove from pan and roll muffins in 1/2 cup melted butter or margarine, then in mixture of 1 cup sugar and 2 teaspoons cinnamon.
