- 4 slices bacon
- 2 c. shredded cooked potatoes or frozen hash browns
- 1/4 c. chopped onion
- 1/4 c. chopped green pepper
- 4 eggs
- 1/4 c. milk
- salt and pepper to taste
- 1 c. shredded Cheddar cheese
Directions

1Fry bacon until crisp; drain and crumble.

2Mix potatoes, onion and green pepper together; fry in bacon drippings until crisp and browned.

3Mix eggs and milk with salt and pepper; pour over potatoes.

4Top with cheese and bacon; cover.

5Cook slowly for about 10 minutes.

6Cut into wedges to serve.
