- 2 tbsp vegetable oil
- 1 cup uncooked white rice
- 1 onion, chopped
- 1/2 green bell pepper, chopped
- 2 cup chicken stock
- 1 can (10 oz) diced tomatoes & green chilies
- 2 tsp chili powder, or to taste
- 1 tsp salt
Directions

1Heat oil in a deep skillet over medium heat.

2Saute rice, onion & bell pepper until rice is browned and onions are tender.

3Stir in stock and tomatoes.

4Season with chili powder & salt.

5Cover and simmer for 30 minutes or until rice is cooked and all liquid is absorbed.

6You can use diced tomatoes & jalapenos for a bit more heat if desired.
