- 1 medium brisket
- 3 Tbsp. tenderizer
- 3 Tbsp. Tony Chachere seasoning
- 4 large pork chops
- 5 lb. charcoal
Directions

1Cut most of the fat from brisket.

2Rub in tenderizer and Creole seasoning, then roll and tie.

3Place on upper rack of Cajun cooker.

4Place 4 pork chops on upper end of brisket.

5After coals are burning good, place Cajun cooker over coals and place water in pan.

6Allow to cook on low heat for 6 to 8 hours, depending upon heat and size of brisket.

7Cut and serve.
