- pastry for 2 pie crusts
- 2 to 3 Tbsp. margarine
- 1 c. celery, sliced thin
- 1/2 c. chopped onion
- 6 eggs
- 1 1/2 to 2 c. Coffee-mate
- 1 (8 oz.) pkg. Monterey Jack cheese, shredded
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 2 c. broccoli, cut in small pieces
Directions

1Preheat oven to 325°.

2Saute onion and celery in margarine. Lightly beat eggs and Coffee-mate.

3Add other ingredients and pour into pastry shells.

4Bake at 325° for approximately 1 1/2 hours until knife inserted in center comes out clean.

5Let stand at room temperature for 10 minutes before serving.
