  • pastry for 2 pie crusts
  • 2 to 3 Tbsp. margarine
  • 1 c. celery, sliced thin
  • 1/2 c. chopped onion
  • 6 eggs
  • 1 1/2 to 2 c. Coffee-mate
  • 1 (8 oz.) pkg. Monterey Jack cheese, shredded
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 2 c. broccoli, cut in small pieces

Directions

    Preheat oven to 325°.

    Saute onion and celery in margarine. Lightly beat eggs and Coffee-mate.

    Add other ingredients and pour into pastry shells.

    Bake at 325° for approximately 1 1/2 hours until knife inserted in center comes out clean.

    Let stand at room temperature for 10 minutes before serving.
