- 1 c. egg substitute
- 3/4 c. fat-free cottage cheese
- 3/4 c. fat-free sour cream
- 2 Tbsp. butter, melted
- 3/4 tsp. salt
- 1 1/2 c. finely chopped onion
- 1 (10 oz.) pkg. frozen broccoli (thawed & drained)
- 1 (8.5 oz.) pkg. corn muffin mix (I use Jiffy)
- Cooking spray
Directions

1Preheat oven to 400°.

2Combine first 5 ingredients in a large bowl.

3Stir in the onion, broccoli, and muffin mix, stir until well blended.

4Pour into a 13 x 9 inch baking pan coated with cooling spray.

5Bake for 27 minutes or until set.

6If using a glass baking dish lower temperature by 25 degrees.

7I serve this dish at breakfast potluck but it is great anytime of day! Enjoy hot or cold.
