Broccoli Casserole

  • 1 medium onion, chopped
  • 1 large head fresh broccoli, chopped
  • 1 1/4 stick butter or oleo
  • 1 tsp. salt
  • 1 can cream of mushroom soup
  • 1 sleeve Ritz crackers, crushed
  • 8 oz. cream cheese, softened

Directions

    Cook broccoli until tender, 10 to 15 minutes.

    Drain well. Transfer to a large mixing bowl.

    Meanwhile, saute onion in butter and salt until tender.

    Remove onion with slotted spoon and add to broccoli with cream cheese and soup.

    Mix well and transfer to greased casserole.

    Add crushed crackers to remaining butter until well coated and top casserole.

    Bake at 350° uncovered for 45 minutes.
