Broccoli Corn Bread

  • 1 (10 oz.) pkg. frozen chopped broccoli
  • 1 large onion, chopped
  • 1/2 c. butter
  • 3 eggs, beaten
  • 1 c. cottage cheese
  • 1 tsp. salt
  • 1 1/2 c. self-rising corn meal or 1 pkg. corn bread mix (Jiffy)

Directions

    Lightly cook broccoli.

    Chop into small pieces (not grated). Saute onion in butter until transparent.

    Combine all ingredients. Pour into lightly greased 9 x 13-inch Pyrex dish.

    Bake at 375° for 40 to 45 minutes, until golden brown.

    Cut into squares. Serves 12.
