- 1 c. chopped onion
- 10 oz. frozen chopped broccoli, thawed
- 4 eggs, beaten
- 1/2 c. melted margarine
- 3/4 c. cottage cheese
- 1 tsp. salt
- 1 (7 oz.) pkg. corn muffin mix (I use Jiffy)
Directions

1Combine onion, broccoli, eggs, margarine, cottage cheese and salt in a bowl; mix well. Add muffin mix; stir just until moistened. Spoon into greased 9 x 13 baking dish. Bake at 400° for 20 minutes or until golden brown. Yields: 12 servings.
