  • 2 boxes Jiffy cornbread mix
  • 4 eggs
  • 10 oz. chopped broccoli, thawed
  • 8 oz. cottage cheese
  • 1 tsp. salt
  • 1 1/2 sticks margarine, melted
  • 1/2 to 3/4 c. milk

Directions

    Melt margarine in 9 x 13-inch pan.

    In a large bowl mix corn muffin mix, eggs, cottage cheese, salt and thawed broccoli.

    Add melted margarine, then add milk and pour into the 9 x 13-inch pan. Bake at 425° about 35 minutes or until toothpick comes out clean. Freezes well.
