  • 1 pkg. Jiffy cornbread mix
  • 1 c. cottage cheese
  • 1/2 stick margarine, melted
  • 1/2 c. chopped onion
  • 1 pkg. frozen chopped broccoli, thawed
  • 2 eggs

Directions

    Fry onion in butter until clear.

    Add thawed broccoli until heated.

    Mix cornbread mix per directions on box.

    To this, add onion and broccoli, the 2 eggs (beaten), cottage cheese and melted margarine.

    greased 9 x 13-inch dish.

    Bake at 375° for approximately 20 to 25 minutes until browned.
