  • 2 sticks butter
  • 2 pkg. Jiffy cornbread mix
  • 1 (10 oz.) frozen chopped broccoli, thawed but not drained
  • 1 onion, chopped
  • 1 (10 oz.) carton cottage cheese or Ricotta cheese
  • 4 eggs

Directions

    Melt butter in a 13 x 9 pan.

    Mix together remaining ingredients.

    Pour batter over butter.

    Sprinkle with 1/2 cup shredded Cheddar cheese.
