  • 1 pkg. chopped frozen broccoli, cooked and drained
  • 1 chopped onion
  • 4 beaten eggs
  • 1 box Jiffy corn muffin mix (8 1/2 oz.)
  • 6 oz. (3/4 c.) cottage cheese (can use 1% fat)
  • 1 stick melted butter or margarine (can be low-fat)

Directions

    Mix all ingredients and pour into 9 x 13-inch greased pan. Bake at 400° for 30 minutes.

    Store leftovers in the refrigerator and reheat to serve.
