  • 1 (8 oz.) frozen broccoli, chopped and thawed
  • 1 large onion, chopped
  • 1 (6 oz.) cottage cheese
  • 4 eggs, well beaten
  • 1/2 c. corn oil
  • 1 tsp. salt
  • 1 box Jiffy corn muffin mix
  • Tabasco (optional)

Directions

    Thaw, but do not cook, the broccoli. Mix with onion, cottage cheese, eggs, oil, salt and muffin mix. Pour in a 9 x 13 pan. Bake at 400° for 25 minutes. Serve hot, cut into squares. Freezes well.
