- 1 large onion, chopped
- 4 eggs, well beaten or egg substitute
- 6 oz. cottage cheese
- 8 oz. pkg. Jiffy cornbread mix
- 10 oz. pkg. frozen chopped broccoli, thawed
- 1/2 c. margarine, melted
- 1 tsp. salt
Directions

1Combine onion, broccoli and eggs in a bowl and mix well.

2Add margarine, cottage cheese and salt; mix well.

3Stir in cornbread mix until moistened.

4Pour into greased 9 x 13-inch baking dish or muffin pan.

5Bake at 400° for 20 to 25 minutes.
