- 8 eggs
- 1 cup grated Gruyere cheese
- 4 shallots green, sliced
- 2 cups broccoli florets
- 2 tablespoons olive oil
- salt
- freshly ground pepper
- 1/4 cup Parmesan cheese
Directions

1Beat the eggs lightly in a bowl.

2Add the Gruyere cheese, shallots and broccoli; season with salt and pepper.

3Heat the oil in a large, heavy frying pan or skillet and pour in the egg mixture.

4Cook over gentle heat, lifting the edges to allow the uncooked egg mixture to run underneath.

5When the bottom of the frittata appears cooked and the top is lightly set, sprinkle with the Parmesan and broil until the cheese is golden.
