Broccoli-Mango-Rice Bake

Ingredients

  • 1 cup Cold Water
  • 2 cups Low Sodium Vegetable Stock
  • 1 head Fresh Broccoli, Cut Into Large Pieces
  • 1 whole Mango, Cubed
  • 1/2 whole White Or Yellow Onion, Diced
  • 1- 1/4 teaspoon Black Pepper
  • 1 teaspoon Salt
  • 2 Tablespoons Sweet Cream Butter, Melted
  • 2 Tablespoons Pure Honey
  • 1 cup Uncooked Brown (or White) Rice

Directions

    Preheat oven to 400 degrees F.

    In a nonstick 9 X 12 baking dish, add water and vegetable stock.

    Stir to mix.

    Set aside.

    In a large mixing bowl, add broccoli pieces, mango cubes, onion, black pepper, salt, butter and honey Stir well to combine.

    Add rice (of your choice) and stir mixture well.

    Transfer to the baking dish and cover with aluminum foil.

    Place in the oven on the middle rack.

    Bake 25 minutes covered, then remove foil and bake an additional 5 minutes, for a total bake time of 30 minutes.
