Broccoli-Mango-Rice Bake

- 1 cup Cold Water
- 2 cups Low Sodium Vegetable Stock
- 1 head Fresh Broccoli, Cut Into Large Pieces
- 1 whole Mango, Cubed
- 1/2 whole White Or Yellow Onion, Diced
- 1- 1/4 teaspoon Black Pepper
- 1 teaspoon Salt
- 2 Tablespoons Sweet Cream Butter, Melted
- 2 Tablespoons Pure Honey
- 1 cup Uncooked Brown (or White) Rice
Directions

1Preheat oven to 400 degrees F.

2In a nonstick 9 X 12 baking dish, add water and vegetable stock.

3Stir to mix.

4Set aside.

5In a large mixing bowl, add broccoli pieces, mango cubes, onion, black pepper, salt, butter and honey Stir well to combine.

6Add rice (of your choice) and stir mixture well.

7Transfer to the baking dish and cover with aluminum foil.

8Place in the oven on the middle rack.

9Bake 25 minutes covered, then remove foil and bake an additional 5 minutes, for a total bake time of 30 minutes.

10Serve and enjoy.
