Broccoli-Pasta Alfredo

Ingredients

  • 1/2 (16-oz.) package uncooked farfalle or bow-tie pasta
  • 2 cups broccoli florets
  • 2 tablespoons butter
  • 1/4 cup finely chopped shallots*
  • 1 cup half-and-half
  • 1 cup refrigerated grated Parmesan cheese
  • 1/4 cup loosely packed fresh basil, chopped
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon crushed red pepper

Directions

    Cook pasta according to package directions, adding broccoli during last 3 minutes of cooking time; drain and keep warm.

    Melt butter in a large saucepan over medium-high heat. Add shallots, and saute 3 minutes or until lightly browned. Stir in half-and-half. Cook, stirring constantly, 3 minutes or until thoroughly heated. Stir in Parmesan cheese and next 3 ingredients until smooth. Stir in pasta and broccoli. Serve immediately.
