Broccoli Salad

Ingredients

  • 1/4 c. olive oil
  • 1/4 tsp. salt
  • 6 c. broccoli flowerets
  • 2 Tbsp. lemon juice
  • 3 cloves garlic, halved
  • 1/8 tsp. crushed red pepper flakes

Directions

    In small saucepan, add oil, garlic, salt and red pepper flakes. Cook over low heat until garlic is lightly browned.

    Remove from heat.

    Cool to room temperature.

    Meanwhile, in large saucepot, add enough water to come halfway up side.

    Bring to a boil.

    Add broccoli.

    Cook 2 minutes or until crisp-tender.

    Remove with slotted spoon and drain.

    Rinse under cold water; drain again. Place broccoli in medium bowl, combine lemon juice and oil.

    Pour over broccoli and toss well.

    Cover and chill 2 hours.
