Broccoli Soup

  • 1 lb. frozen broccoli
  • 1 stick butter
  • 1 onion, chopped
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • milk (2 soup cans)
  • 1 can chopped mushrooms (optional)
  • 1/4 lb. Velveeta (or Cheddar)
  • 1/4 tsp. salt
  • dash of pepper

Directions

    Saute onion in butter, puree half of the broccoli in the blender with 1 can of milk.

    In saucepan, mix onions, all the soups and milk.

    Let simmer for a few minutes.

    Then add cheese. This is better the day after it is made.
