Broccoli Soup

  • 1 1/2 lb. chopped broccoli
  • 1 medium onion, diced
  • 1/2 c. butter
  • 1 c. flour
  • 3 c. milk
  • 4 chicken bouillon cubes
  • 1/8 tsp. garlic powder
  • salt and pepper to taste

Directions

    Simmer broccoli in 2 quarts water in saucepan for 1 1/2 hours. Remove from heat.

    Saute onion in butter in large saucepan until tender.

    Add flour; blend well.

    Add broccoli and broccoli liquid. Simmer for several minutes.

    Stir in milk, bouillon cubes, garlic powder, salt and pepper.

    Simmer for several minutes longer. Yields 8 servings.
