Broccoli Soup

Ingredients
- 3 c. or 2 cans (14 1/2 oz. chicken broth)
- 1 large bunch broccoli, chopped (about 5 c.)
- 1 1/2 c. chopped onion
- 3 bay leaves
- 6 Tbsp. butter or margarine
- 7 Tbsp. flour
- 3 c. milk
- salt and pepper to taste
Directions

1In a saucepan, bring chicken broth to a boil.

2Add broccoli, onion and bay leaves.

3Reduce heat and simmer until broccoli is tender; remove bay leaves.

4Meanwhile, in another saucepan, melt butter.

5Stir in flour to make a smooth paste.

6Gradually stir in milk.

7Cook over medium heat until mixture is hot and thickened stirring often.

8Add 1 cup of broccoli to milk mixture; stir until blended.

9Gradually add remaining broccoli stock to milk mixture. Heat and stir until well-blended.

10Season with salt and pepper. Yields 6 servings.
