Broccoli Soup

Ingredients

  • 2 onions, chopped
  • 4 Tbsp. butter or margarine
  • 4 Tbsp. flour
  • 1 1/2 qt. chicken stock (6 c.)
  • 2 (10 oz. each) pkg. frozen broccoli or 2 bunches fresh broccoli
  • 2 egg yolks
  • 1 c. cream or milk
  • salt and pepper to taste

Directions

    Melt butter or margarine in a large soup pot. Add chopped onions and cook until soft and translucent. Add flour. Cook another minute. Add chicken stock, broccoli and seasonings.

    Bring to a boil. Simmer 20 minutes or until broccoli is tender.
