Broccoli Soup

  • 5 c. chicken stock
  • 1 1/2 (10 oz.) pkg. frozen, chopped broccoli, unthawed
  • 1 small onion, coarsely chopped
  • 1 bay leaf
  • 1/4 c. butter
  • 5 Tbsp. flour
  • 2 c. light cream
  • 1 tsp. onion salt to taste
  • 1 tsp. salt to taste

Directions

    Combine broccoli, onion and bay leaf with stock in a large pot. Cover and cook at medium heat for 20 minutes.

    Melt butter; blend in flour.

    Stir over low heat for 8 to 10 minutes.

    Do not brown. Gradually blend in vegetable stock mixture.

    Heat; do not boil. Before serving, add 2 to 3 ounces grated Velveeta cheese.

    Do not freeze.
