Broccoli Stroganoff

  • 1 bunch broccoli chopped coarsely, peel stalks first
  • onion 1 lg., chopped
  • 2 cloves garlic finely chopped
  • 1/4 pound mushrooms sliced
  • low fat cream cheese or 8 ounces reg.
  • soy sauce
  • salt
  • pepper to taste

Directions

    Steam or cook broccoli in small amount of water until just tender. Drain and set aside. Saute mushrooms in 2 tablespoons butter until all liquid has evaporated. Set aside.

    Saute onions and garlic in butter until tender. Add cream cheese, 2 to 3 tablespoons soy sauce and stir until smooth and heated through. Fold in steamed broccoli and mushrooms. Serve over fettucini or other noodles.
