- 1 1/2 lb. flounder fillets
- black pepper
- 1 Tbsp. olive oil
- 2 Tbsp. mustard
- 2 Tbsp. chives, chopped
- 4 lime wedges
Directions

1Preheat broiler.

2Arrange fillets on baking sheet.

3Sprinkle with pepper, then brush them with oil.

4Spread mustard evenly over fish.

5Put fillets into broiler, about 3 inches from heat source. Broil for about 2 minutes or until golden brown.

6Do not overcook. Place on individual dishes; sprinkle with chives and add wedge of lime.
