- 8 c. water
- 1/4 sliced onion
- 1 clove garlic
- 1 bay leaf
- 2 ribs celery with leaves
- 1 1/2 Tbsp. salt
- 1/8 tsp. cayenne
- 2 lb. raw shrimp
- 1/2 lemon
Directions

1Simmer shrimp in boiling water for 15 minutes.

2Permit to cool in water in which they have been cooked.

3Dry them between towels. Chill them.

4Serve them very cold in their shells (to be shelled at the table) with a bowl of your favorite dressing.
