  • 8 c. water
  • 1/4 sliced onion
  • 1 clove garlic
  • 1 bay leaf
  • 2 ribs celery with leaves
  • 1 1/2 Tbsp. salt
  • 1/8 tsp. cayenne
  • 2 lb. raw shrimp
  • 1/2 lemon

Directions

    Simmer shrimp in boiling water for 15 minutes.

    Permit to cool in water in which they have been cooked.

    Dry them between towels. Chill them.
  4. 4
    Serve them very cold in their shells (to be shelled at the table) with a bowl of your favorite dressing.
