  • 2 x zucchini
  • 1 x eggplant
  • 1 x tomato
  • 1 x purple onion
  • 1 x sweet yellow pepper
  • 1 x sweet red pepper

  • 3/4 c. balsamic vinegar
  • 3/4 c. vegetable oil
  • 3/4 c. honey
  • 1 Tbsp. salt
