- 3 cups long grain brown rice, cooked and chilled
- 10 ounces frozen peas and carrots, thawed
- 1 yellow onion, diced
- 4 eggs
- 3 tablespoons sesame oil
- 14 cup soy sauce
Directions

1In a deep skillet begin to heat the sesame oil.

2Saute onion and pea and carrots for 2-3 minutes until the onion begins to soften.

3Push vegetables over to one side of the pan and crack your eggs into the empty side of the skillet.

4Scramble them until soft set.

5Place your cold rice in the pan along with the soy sauce and stir to combine.

6Note: Using cold rice is the key!

7I usually make my rice a day ahead of time and refrigerate overnight.
