Brown Fried Rice

Ingredients

  • 3 cups long grain brown rice, cooked and chilled
  • 10 ounces frozen peas and carrots, thawed
  • 1 yellow onion, diced
  • 4 eggs
  • 3 tablespoons sesame oil
  • 14 cup soy sauce

Directions

    In a deep skillet begin to heat the sesame oil.

    Saute onion and pea and carrots for 2-3 minutes until the onion begins to soften.

    Push vegetables over to one side of the pan and crack your eggs into the empty side of the skillet.

    Scramble them until soft set.

    Place your cold rice in the pan along with the soy sauce and stir to combine.

    Note: Using cold rice is the key!

    I usually make my rice a day ahead of time and refrigerate overnight.
