- 2 Tbsp. butter
- 1/2 sliced onion
- 3 Tbsp. flour
- 1 c. brown stock
- 1/4 tsp. salt
- 1/8 tsp. pepper
Directions

1In a frying pan, cook onion in butter until lightly browned. Remove onion and discard.

2Continue cooking, stirring constantly until butter is browned.

3In a bowl, combine flour, salt and pepper.

4Add to butter.

5Cook until flour is browned.

6Slowly add stock, stirring constantly.

7Bring to a boil.

8Boil for 2 minutes. Yield: Approximately 1 cup.
