Brown Rice Strata

Ingredients

  • 2 2/3 c. water
  • 1 c. brown rice
  • 1 tsp. salt
  • 1 Tbsp. margarine
  • 1/2 c. slivered almonds
  • 2 Tbsp. chopped pimento
  • 8 oz. processed American cheese, shredded
  • 1 pkg. (10 oz.) frozen chopped broccoli, well drained
  • 3 eggs, beaten
  • 1 1/2 c. milk
  • 1 Tbsp. minced onion
  • 1 tsp. Dijon-type mustard
  • dash of red pepper
  • 1 tsp. salt

Directions

    Cook rice with water, 1 teaspoon salt and margarine for 45 to 50 minutes.

    Spoon about half the rice into buttered 8 x 8 x 2-inch baking dish.

    Arrange broccoli over rice; dot with pimento. Sprinkle with about 3/4 cup cheese.

    Spoon on remaining rice in even layer.

    Combine last six ingredients and pour over rice mixture. Sprinkle with remaining cheese and almonds.

    Cover and refrigerate at least 2 hours.

    Uncover and bake at 300° until top is brown, about 1 hour and 15 minutes to 1 1/2 hours.
