- 6 Tbsp. butter or margarine
- 2 tsp. flour
- 2 c. heavy cream (half and half can be substituted)
- 2 1/4 tsp. salt (less if desired)
- 1 tsp. black pepper
- 1/4 c. finely chopped onion
- 1/4 tsp. nutmeg
- 8 potatoes, boiled or baked, peeled and finely chopped
Directions

1Melt 4 tablespoons butter in saucepan; stir in flour. Gradually add cream and cook, stirring constantly until sauce bubbles and thickens.

2Add salt, pepper, onion and nutmeg; blend thoroughly.

3Add potatoes to the sauce and mix well.

4Pour into a lightly greased 2-quart baking dish.

5Dot top with remaining 2 tablespoons butter.

6Bake in 350° oven about 45 minutes until browned.

7Serves 6 to 8.
