Browned Cream Potatoes

  • 6 Tbsp. butter or margarine
  • 2 tsp. flour
  • 2 c. heavy cream (half and half can be substituted)
  • 2 1/4 tsp. salt (less if desired)
  • 1 tsp. black pepper
  • 1/4 c. finely chopped onion
  • 1/4 tsp. nutmeg
  • 8 potatoes, boiled or baked, peeled and finely chopped

Directions

    Melt 4 tablespoons butter in saucepan; stir in flour. Gradually add cream and cook, stirring constantly until sauce bubbles and thickens.

    Add salt, pepper, onion and nutmeg; blend thoroughly.

    Add potatoes to the sauce and mix well.

    Pour into a lightly greased 2-quart baking dish.

    Dot top with remaining 2 tablespoons butter.

    Bake in 350° oven about 45 minutes until browned.

    Serves 6 to 8.
