Brunch Enchiladas

- 1/2 c. green onions
- 1/2 c. green pepper
- 12 oz. cooked chopped ham
- 2 1/2 c. shredded Cheddar cheese
- 4 eggs
- 1/2 tsp. salt
- 2 c. light cream
- 1/4 tsp. garlic
- 1 Tbsp. flour
- flour tortillas
Directions

1Toss together the green onions, green pepper and ham.

2Roll tortillas with ham mixture and 3 teaspoons cheese.

3Arrange, seam side down, in a 12 x 7 1/2-inch dish.

4Beat together eggs, salt, cream, garlic and flour.

5Pour over tortillas.

6Cover and chill overnight.

7Bake, uncovered, for 45 minutes, or until liquid is set.

8Add additional cheese to top the last 10 minutes of baking. Serve with picante sauce or fresh salsa.
