- 1 (10 oz.) pkg. frozen chopped broccoli or chopped spinach or 8 oz. asparagus spears, cooked and drained
- 1/2 c. Bisquick baking mix
- 2 eggs
- 1 tomato, peeled and thinly sliced
- 1 c. sour cream
- 1 c. creamed cottage cheese
- 1/4 c. butter or margarine, melted
- 1/4 c. grated Parmesan cheese
Directions

1Heat oven to 350°.

2Grease 9-inch pie plate.

3Spread broccoli or spinach or asparagus in plate.

4Beat sour cream, cottage cheese, baking mix, margarine and eggs until smooth.

5Pour into plate.

6Top with tomatoes; sprinkle with Parmesan cheese.

7Bake until knife inserted between center and edge comes out clean, about 30 minutes.

8Cool 5 minutes.
