  • 2 whole Ripe Tomatoes
  • 2 whole Green Onions
  • 1/2 cups Flat Leaf Parsley
  • 1 Tablespoon Fresh Lemon Juice
  • Salt And Pepper, to taste
  • 2 cloves Garlic

    Preheat oven to 350 degrees F. Slice the baguette thinly.

    Place the bread slices in a large ovenproof pan and put it into the oven for about 10 minutes, until crusty and slightly golden.

    Remove from oven and let cool.

    In the meantime, seed and finely chop tomatoes and put them into a bowl.

    Add salt.

    Chop the green onions, including the green parts and put them into the bowl.

    Chop parsley and add it as well.

    Mix all these ingredients, add lemon juice and pepper.

    Set aside.

    Peel and halve the garlic cloves.

    Rub both sides of the bread slices with the inside of the garlic.

    Spread about 1 tablespoon of the tomato mixture on each bread slice.

    Serve immediately or refrigerate if you plan to serve it more than 1 hour after making it.
