Ingredients

  • 1 3/4 lb. fresh plum tomatoes (about 12 - 14 tomatoes)
  • 2 Tbsp. minced garlic
  • 1 c. coarsely chopped fresh basil
  • 1 tsp. balsamic vinegar
  • 1/3 c. olive oil
  • salt & coarsely ground pepper to taste
  • 8 slices peasant bread
  • 1 garlic clove, cut in half
  • 1/4 c. olive oil

Directions

    Chop the tomatoes into 1/4 inch pieces.

    Toss with 2 Tbsp. garlic in a bowl.

    Add the basil, vinegar, 1/3 c. olive oil, salt and pepper and mix well.

    Let stand at room temperature for at least 15 minutes.

    Rub bread with the cut side of the garlic halves and brush bread with 1/4 c. olive oil.

    Place on grill rack.

    Grill for 5 to 8 minutes or until toasted.

    Arrange the bread on a serving plate and top with the tomato mixture.

    Serve immediately.
