Ingredients

  • 1 1/2 lb butternut squash, halved
  • 3 tbsp olive oil
  • 4 cloves garlic, smashed
  • 12 thin slices ciabatta, toasted
  • 4 cups baby arugula
  • 3.5 oz feta cheese
  • None None balsamic glaze, to drizzle

Directions

    Preheat oven to 400°F. Place squash cut-side up on a baking tray. Drizzle with 2 tsp oil and season. Bake for 30 mins.

    Toss garlic in 1 tbsp oil and add to tray. Bake for another 10-15 mins, until squash is tender. Discard seeds. Scoop squash flesh from skin and press garlic from skin. Mash together and season.

    Spread squash mixture over toast. Top with arugula and feta then drizzle balsamic glaze and olive oil over top. Season with cracked pepper.
