Ingredients
- 3 cloves garlic
- 2 tsp. lemon juice (fresh is best)
- salt and pepper
- olive oil
- fresh basil
- 1 or 2 tomatoes, diced
- fresh loaf bread
- good olive oil
Directions

1Mash the garlic cloves in a bowl big enough to hold tomatoes. (I use the garlic press, then mash them.)

2Squeeze or pour lemon juice.

3Sprinkle liberally with salt and mix well.

4Add about 2 tablespoons olive oil and a dash of Italian dressing if you like. Add tomatoes and toss.

5Add more oil or dressing if the tomatoes aren't thinly coated.

6Add basil, about 15 leaves.

7Chill.

8Toast the bread and serve with extra virgin olive oil and the tomato mix. If you want to toast the tomatoes already spread on the bread, DO NOT add basil until you remove it from the oven.
